Crock Pot Chicken and Dumplings

Chicken and dumplings is true comfort food.  It’s a popular staple in southern US cuisine.  Ways to prepare the dish vary, depending on where you try it.  This chicken and dumplings recipe is easy to make in the crock pot.  It uses few ingredients and egg noodles.  It can be prepared in 4 hours, or cook for up to 7 throughout  the day.

Ingredients

  • 1 (12 ounce) package of wide egg noodles (I used Manischewitz)
  • 1.5 lb. chicken tenders
  • 1 (22 oz. or family size) can cream of chicken soup (I used Campbell’s)
  • 11 oz. water (or about 1.5 cups)
  • 11 oz. chicken broth (or about 1.5 cups)

Directions

  1. First, spray the interior of a crock pot with cooking spray.  Pour the liquids (cream of chicken soup, water, chicken broth) into the crock pot, then stir until well-blended.
  2. Then add the raw chicken, cover the crock pot and cook on high for 3 hours.
  3. After 3 hours, remove then cut up  the chicken.
  4. Next, add the egg noodles and return the chicken to the crock pot.  Push down the ingredients, checking that the noodles are covered in water.  If not, add more water.
  5. Finally, add salt and pepper for taste, then mix together the chicken and dumplings before serving.
