Chocolate no bake cookies sounds like a winner to me, especially if you want something that whips up in no time. If you’re a chocolate lover in search of a quick and easy dessert, this one’s for you. During the hot summer southern months, you can’t go wrong with anything called “no bake.”

A Cookie by Any Other Name

I have heard these called Missouri cookies (recipe thanks to my best friend), and you may know them as something else, but these no bake chocolate treats will have you and your family begging for more.

These can easily be made gluten-free, based on the oats you decide to add. You can also use coconut oil or almond butter for a different flavor or overall consistency.

Note: These have peanut butter in them. If you have a nut allergy, you will need to alter the recipe slightly.

Ingredients

  • 2 c. sugar
  • 1/4 c. unsweetened cocoa powder
  • 1/2 c. milk or evaporated milk
  • 1/4 c. butter or margarine (8 tablespoons or 1 stick)
  • 1 tsp. vanilla extract
  • pinch salt
  • 1/2 c. peanut butter
  • 3 c. quick oats

Directions

  1. First, add the sugar, cocoa, milk and butter or margarine to a medium saucepan.
  2. Next, cook over medium heat until the mixture starts to boil, stirring as it cooks. Cook for about 3 minutes.
  3. Then, remove the saucepan from the stove and allow to cool for about a minute.
  4. Add the vanilla extract, salt, peanut butter and oats to the chocolate mixture.
  5. Stir the ingredients until well mixed.
  6. Finally, drop the mixture onto wax or parchment paper by teaspoons or tablespoons* (depending on the size you would like).
  7. Allow to cool. Store in an airtight container. (They will last longer in the refrigerator.)

*If using a tablespoon, you will make about 2 dozen cookies.  If using a teaspoon, you will make about 4 dozen.
