Who doesn’t love a little shrimp? And we know that adding some shrimp to your diet is a healthy option with long-term benefits. Shrimp scampi is a dish full of flavor, but how can we prepare it for everyday meal times?
Life can get busy, which is why we need easy recipes that can be thrown together after a long day at work or to spice up your hum drum dinners. You can prepare shrimp scampi in many ways, but I’m all for one with as few ingredients as possible.

The great thing about this recipe is that it works well on its own. It can be tossed in your favorite pasta dishes. And you can even serve it with a side of rice and vegetables. You’ll be sure to please the pickiest eater with this dish.
Being a Spanish teacher, I chose to make this shrimp scampi dish into a bit of an American “tapas” experience (well explained by Wikipedia). My friend and I paired them with a roasted carrot and tomato soup, crispy baked chicken wings and some gorgeous caprese salad. It was a delicious evening of wine and food to share with the family.
Recipe for shrimp scampi
Servings: 2
Ingredients
- 3/4 lb. peeled large shrimp
- 3 tbsp. olive oil
- 1/2 small onion (chopped)
- 1 tsp. garlic (minced)
- 1/2 red/orange peppers (sliced)
- 1 tbsp. Italian seasoning
Directions
- Heat olive oil over medium heat.
- Add onions, garlic and peppers and cook until soft, about 3 to 4 minutes.
- Add shrimp and Italian seasoning and cook until opaque.
- Turn shrimp over and cook 1 to 2 minutes more.
- Serve shrimp scampi while hot. (Can be added to your favorite pasta or rice dish or eaten all by itself.)
